Who loves Cashews? I do & all things Cashew.
This is a Cashew Cream Cheese or dip 😆 pretty much a great spread on anything 👌.
This is such a easy recipe & i made extra to use during the week. So I tripled this recipe.
1 cup @myorganicsfoods Cashews.
2 Tablespoons Organic Coconut oil.
2 Tablespoons fresh lemon juice.
1/2 Teaspoon Sea Salt.
1 Tablespoon Nutritional yeast.
2-6 Tablespoons water, as needed to blend.
2-3 Chives or Spring onions thinly sliced.
2-3 Carrots finely grated.
2-3 Tablespoons of Bell Peppers.
Soak Cashews for 8 hours before. Add Cashews, Coconut oil, Lemon Juice, Sea Salt & Yeast to blender or food processor. Add water bit by bit while scraping down sides. Once mixture is light & creamy transfer to container and stir in Carrots, Bell Peppers & Spring Onions. I put some more Salt & Pepper to taste.
I served this with @kitzlivingfoods Crackers, Sweet Potatoe crackers & some Olives. Perfect to snack on while havinga weeken wine 😋. My son loves this on his morning toast as well. Definitely a easy & tasty recipe to try plus it’s Organic & Vegan.
